“So, you want to open a bakery?”

“So, you want to open a bakery?”

It’s a funny tagline that I say with a bit of sarcastic humor anytime something goes sideways at the bakery. 

Like the time the large rack oven broke two days before Thanksgiving. Or the time the dough sheeter would only move in one direction, so we kept the machine running while two of us danced an improvisational choreographed dough dance. One of us caught the dough as it sailed off one side, and then carried it around to the other side to set it delicately on a moving belt. And, maybe my favorite memory, was the time we showed up to work and the front door WOULD NOT OPEN. Stumped, we called a locksmith, only to find that the lock had been glued shut by a disgruntled neighbor who wanted to vent some frustration.

Sometimes, you just have to laugh through the tears. 

As the universe continues to throw us curveballs, we have gotten more accustomed to thinking quickly and creating plans on the fly to remedy situations. This week we unfortunately have been dealt another -– due to illnesses and other circumstances beyond our control, we are operating with a skeleton crew of 8, down from the 15 we had been maintaining. In order to produce the quality of product I require, we have to streamline our quantities, so I have narrowed down our menu out of necessity. This means putting our pre-order menu on hold for the moment in order to best deal with these current staffing shortages. There is only so much I can do.

We hope to see you at the shop this weekend, where we will still have a full counter of pastries!
