Duo of Harvest Tarts

When one season is transitioning into another, it's almost as if you’re in two seasons at once. Like right now, as we witness the first signs of fall emerge while the last bits of summer linger. There are crisp cool mornings followed by warm sunny afternoons, colorful leaves appearing amid a sea of green. Alongside the end of summer produce we are beginning to see gorgeous fall fruits popping up in the markets — and on one of my neighbor’s Italian prune plum tree!

Our Secret Item this week celebrates this transition with a beautiful combination of end of summer/start of fall fruits. We will be making a Duo or Harvest Tarts from our croissant dough with freshly milled Rouge de Bordeaux flour, a spread of frangipane, and cherries, blueberries, nectarines and my neighbor’s Italian prune plums all tossed in brown butter, and homemade plum jam with orange flower vanilla bean syrup nestled on top.

I’ve written before about my passion for baking with local seasonal fruits, and how I select whatever looks the ripest and juiciest.

From there I decide which flours best match each particular fruit. I love blending those flavors together with a bit of sugar and a splash of jam to create something that captures a moment in time.
