Sauvie Island Blueberry Galette and Happy 4th!

Hello!

What a weekend! To all who came to the bakery for walk up or pickup orders, thank you for braving the heat. We were happy to offer Strawberry Jam Creamssants and chilled bottles of Rosé as a special thank you for coming out — the Creamssants went fast! And for those we didn’t see, we hope you all made it through safely and soundly.

We also released our Fourth of July Weekend Menu on Sunday, which includes several special pies such as Key Lime, Double Crust Peach, and Summer Berry Buckwheat Streusel.

I was thrilled to bring back the Key Lime Pie with Homemade Graham Cracker Crust that we offered back in April for this weekend’s menu, only this time with the addition of Whipped Cream! The custard of this pie is bright in color, tart in flavor and the custard silky smooth. Every bite is like a taste of summer sunshine! It's also fantastic cold from the fridge, and if this summer heat continues that might be exactly how you’ll want to enjoy it. We only have a couple of these pies left, so don’t wait.

We’ve also added a Double Crust Peach Pie to the menu. It’s one of my greatest pleasures to work with the produce of the season, and few things say summer more than peaches. For this pie, we take our incredibly flaky old fashioned pie dough and fill it with sweet summer peaches before topping it with another layer of buttery crust. To balance the sweetness of the peaches, they’re tossed in apricot jam for a hint of tartness.

Summer Berry Pie with Buckwheat Streusel also continues to be featured on the menu, along with our Rhubarb Raspberry Hand Pies, which are perfect if your celebrations are on a smaller scale this year.

And this week we have a Secret Item available featuring more of the incredible summer produce of the PNW: Sauvie Island Blueberry Galettes! We take freshly picked Sauvie Island blueberries, toss them in a Marionberry syrup, tuck them into Bakeshop pie dough, and bake until they're jammy. We toss more fresh blueberries on top post-bake and serve it with a side of whipped cream.
