We're honored and excited to be making matzah for the 6th year in a row! This centuries old recipe stems from the era of the Spanish Inquisition, when Catholic Spaniards were encouraged to report any religious activity outside of the Church. A woman in Northern Spain named Angelina de Leon secretly made matzah, which had been outlawed with Judaism. Her maid saw her and testified against her in court, exposing her as a secret Jew. The recipe uses flour, high quality olive oil, eggs, a little bit of wildflower honey, and black pepper. It's baked thin, crisp, and a little dark for nice caramelized edges.
